Boozy Cupcakery

SO. I am not a baker, nor do I really like sweets very much. But I do love Jameson, and cupcakes are my guilty pleasure, so what better dessert to experiment with?!

These were quite the little process to make. I baked the cakes the day before and froze them in ziploc bags. Then I went on the hunt for an apple corer to cut out the middles, so I could fill them with whiskey ganache. The next day, my friend Allie came over in the rain to help out and taste test. The verdict was definitely that I put too much Jame-o in the ganache. It tasted really strong when they were warm, but actually once they were a day old they had mellowed out. I dished a bunch out at work and got rave reviews. I don't know if I will ever take the time to actually make these again....BUT. I will say that I will definitely be baking more Guinness into my cakes and adding more Bailey's to my frostings. The cake turned out perfectly moist AND the frosting was super amazing with the hint of Baileys.

Here's some photographic evidence. Notice my poor frosting job....we'll work on that. It's an art, I suppose. I just whacked the end off a ziploc bag and squeezed it all over the place. It's about on par with my Christmas present wrapping skills.
